preparation
- Knead all the ingredients for the shortcrust pastry with the dough hook until crumbs are formed. Press together into a ball with your hands and chill for 1 hour
TIP: Shortcrust pastry should be kneaded for as short a time as possible so that it remains crumbly!

Roll out the shortcrust pastry and line a greased springform pan or tart pan with it. Pull the edge up about 2 cm.
Prick the bottom with a fork so that the air can escape during blind baking
Blind bake at 180 °C for 10 minutes
Turn the oven down to 160°C

For the lemon cream, put all the ingredients in a bowl and stir
Pour the lemon-egg mixture onto the shortcrust pastry and bake at 160 °C for 20-25 minutes
Cool the tart for at least 1 hour before serving
