Lemon Poppy seed Cupcakes
Poppy seeds and lemon are a "perfect match". The lemon provides the summery freshness and the poppy rounds it off perfectly.

Ingredients
for the dough
200 g | Flour |
150 g | Sugar |
200 g | Butter or Margarine |
5 | Eggs |
1 Pck. | Vanilla sugar |
2 tsp | Baking powder |
2 | Lemons |
1/2 tsp | Salt |
20 g | Mohn |
for the topping
200 g | Double cream cheese |
250 g | Whipped cream |
30 g | Powdered sugar |
Zest of a lemon | |
white, black or red Currants |
Preparation
Dough

Grate the zest of the lemons and squeeze the juice
- Cream together the butter, sugar and vanilla sugar on the highest setting
- Gradually stir in the eggs
- Mix the flour, baking powder and salt and gradually stir into the mixture
- Add half the lemon zest, lemon juice and poppy seeds to the batter and stir in evenly
- Preheat the oven to 180°C
- Grease the muffin tin or line it with muffin cases
- Divide the batter between the muffin molds and bake for 15-20 minutes until golden
- Let the muffins cool completely
Topping
-
Whip the double cream cheese with the icing sugar on the highest setting until it is nice and creamy
- Whip the whipped cream and fold in
- Stir in the remaining lemon zest
- Place the topping in a piping bag with a star nozzle and pipe onto the cooled muffins
- Decorate with white, red or black currants
