Carrot cake with frosting (with vegan alternative!)

Juicy and delicious! This carrot cake is also super easy and quick to make as a vegan alternative!

The grated carrots and applesauce make this cake incredibly juicy and delicious. To make this cake vegan, only two ingredients (milk and butter) need to be substituted. The recipe is super simple and is ready in no time. Assuming a machine does the grating of the carrots ;-)

You can easily create the texts like “carrot cake” and “Rüblikuchen” yourself. The “Text Editor” application in the mycusini Club is available for this purpose. The text "carrot cake" was created using the Aseret font. Simply type in the word “carrot” and confirm. Then enter the word “cake”. The two texts can then be moved to the desired location, ideally so that the two texts connect in one place.

We did the same thing for the “Rüblikuchen” lettering, except we used the Terra font.

Ingredients

Springform pan (20 cm) or brownie pan

250 g Flour
100 g Zucker
250 g carrots, finely grated
150 g applesauce
75 ml Vegetable oil (sunflower or rapeseed)
230 ml Milk (vegan alternative: plant milk of your choice)
1 Socket  Salt
1 TL Cinnamon
1/2 Pck. baking powder
1 THE  apple cider vinegar
1 Pck. vanilla sugar
100 g chopped walnuts
Frosting
200 g powdered sugar
50 g Butter (vegane Alternative: Margarine)
1 Pck. vanilla sugar
1 squirt lemon juice
1/2 TL Cinnamon
1 Socket Salt

Preparation of carrot cake

  1. Preheat oven to 180 °C (fan oven 170 °C)

  2. Grease the brownie or springform pan very well

  3. Mix all dry ingredients (flour, sugar, baking powder, salt, vanilla sugar and cinnamon).

  4. Mix the grated carrots with the applesauce, walnuts, oil, milk and vinegar and then slowly stir into the dry ingredients

  5. Pour the mixture into the greased cake or brownie tin and bake for 50-60 minutes

  6. After baking, allow to cool thoroughly before spreading the frosting on

Tip: The cake is very moist and delicious even without frosting!

 

 preparation of frosting

  1. Beat all ingredients on high for 1-2 minutes. If you want a softer consistency, you can add 1 tablespoon of milk or vegan plant milk and stir briefly

Tip: You can make a frosting of your choice here. I've also made it once with a classic cream cheese frosting and that was delicious too!
